Greek Chicken Gyros Recipe

Ingredients:
600 gr pounds boneless chicken thighs
2 Tbsp chopped garlic.
2 Tbsp lemon juice
1 tsp black peppercorns
180 ml olive oil
2 Tbsp paprika
2.5 Tbsp dried rosemary
2.5 Tbsp whole coriander seeds
2.5 Tbsp red chili flakes
salt to taste
½ large onion
1 bamboo skewer

Instructions:
Pound each chicken thight.
Add paprika, coriander seeds, peppercorns, dried rosemary, dried red chili flakes and salt in a mortar & pestle. Grind, then add garlic and grind again. Now add olive oil and lemon juice and mix everything.
Add the marinade to the chicken thighs and mix well. Put in the fridge for 12-36 hours.
Take half onion and stick a bamboo skewer in the middle to form a vertical pole.
Skewer each marinated chicken thigh. Repeat until all the chicken thighs are skewered.
Pre-heat the oven at 190 С. Place the meat over a cookie tray and bake for about 1 hour.
Cool for 15 mins. Shave the chicken gyro meat and serve it with tzatziki sauce.
