Red Wine Braised Beef Ribs

Ingredients:
2 Tbsp olive oil
8-10 pieces bone-in short beef ribs
salt and pepper to taste
1 onion diced
2 stalks celery diced
2 carrots diced
3 cloves garlic crashed
2 tablespoons tomato paste
500 ml dry red wine
700 ml beef broth
2 bay leaves
1 spring thyme
1 spring oregano

Instructions:
Preheat the oven to 180Β°C.
Rinse and pat dry the meat and generously season with salt and pepper.
Heat 2 tbsp olive oil in Dutch oven over medium-high heat. Brown the meat in two batches for 5-6 minutes on each side, then transfer to a plate.
Add onion and cook until translucent and softened. Then add 2 stalks diced celery and 2 diced carrots, and cook for 3-5 minutes more.
Add 3 cloves smashed garlic and 2 tbsp tomato paste and cook for a few more minutes.
Add wine and beef broth and stir.
Transfer the meat back to the pot, add bay leaves, thyme and oregano.
Cover with the lid and transfer to the oven.
Cook for 2 Β½-3 hours or until the ribs are tender.

Beef Turnovers with Sweet Chili Sauce

Ingredients:
1 package puff pastry
350 gr beef sirloin, thinly sliced and chopped (or ground beef)
8 thin slices prosciutto or ham
100 gr mushrooms, finely chopped
Β½ onion, finely chopped
2 Tbsp Dijon mustard
Β½ tsp thyme
salt & black pepper
2 Tbsp olive oil, divided
1 egg beaten for eggwash
sweet chili sauce

Instructions:
Heat olive oil in a large pan over medium-high heat. Add chopped sirloin, mushrooms, onions, and thyme. Season with salt and pepper to taste. Cook 5 minutes until beef is browned, stir in dijon mustard, and set aside.
Preheat oven to 200 C. Line a baking sheet with parchment paper.
Roll out puff pastry and cut into 8 equal squares.
Place 1 slice of prosciutto diagonally on each square. Spoon beef mixture into the center of each square, diagonally. Close puff pastry, pressing to adhere.
Brush each turnover with egg wash. Bake for 20-25 minutes until golden brown.
Serve with sweet chili sauce.
